Simple Stock

Making your own stock is easy.

had a couple lamb bones in my freezer since we bought half a lamb a while back, and now I decided to make stock from them. There’s not much meat on, but there’s some (at least on mine it was a rather small amount).

You need:
lamb bones (mine were just under 1 kilo together)
vegetables for flavor (I used, onion, carrots and celeriac)
Spices (salt, few turn on the black pepper mill, some whole green peppers, 3 average garlic cloves, and a bit of fresh red chili)
Water so the bones are covered
Butter

Cut the vegetables in rather large pieces.

Melt the butter in a casserole big enough (3 liter is enough for this amount)
Put in the bones and the vegetables, let it fry a little while stiring around.

Pour over the water lower the temperature, put a lid on and let simmer for at least 1 hour. Don’t stir to much, the vegetables will get rather soft and easily mashed towards the end.

Take out the bones, and cut of the meat from them. Also get the vegetables out if you can, its easier to strain the stock that way.

Now you got a nice stock, you can use it for a nice soup if you like, or as flavor in a stew or sauce.
