This is a simple nice little potato salad, to be eaten warm. Works well with a spicy sausage.
The salad is best served right away, if you need to prepare in advance, all you really can do is boil and cut the potato into pieces. Then when it’s time to serve heat up the potato and poor over the dressing and rucola afterwards. It is rather nice when cold as well, but it is at its best lukewarm.
You need:
- Potato
- Red union
- Rucola (or other type of salad that can be gently warmed, you could also use parsley)
- Dijon mustard
- Olive oil
- Apple cider vinegar (or white wine vinegar)
- water
- salt and pepper
First of all peel and boil enough potato (3-4 per person depending on size). While the potato boil make the dressing.
Poor about half a deciliter olive oil in a mixing bowl. Add roughly the same amounts of vinegar and water, if you want it less sour take a little less vinegar. The dressing should taste rather sour at this point. Now add one good tablespoon of mustard. Whip the dressing well and add some more water to make it a bit thinner if needed. Chop the red union finely and stir into the dressing. Let it rest until potato is boiled. The dressing is enough for about 8-10 potatoes.
Once the potatoes are boiled cut into rough pieces and put in a serving bowl. Poor over the dressing and stir gently. The dressing might seem to be too small an amount, but the potatoes are not supposed be simmering in dressing, it’s only there to add taste. Now let the potato cool down just a few degrees, it’s supposed to still be slightly warm when serving. Chop the rucola (or parsley) roughly and gently stir in just before putting it on table.
